Through conversation, I realized the owner has a restaurant in Williamsburg, Brooklyn, and he is originally from Roma. Highly recommend.

The carbonara was extremely creamy and coated the pasta perfectly, with al dente noodles that had a nice chew. The sauce was infused with guanciale fat, providing a slight smokiness and saltiness, and the guanciale pieces were tender and crispy. I also tried the bucatini, which offered a tangy heat that was almost tear-inducing, feeling like the perfect, elevated spaghetti I always wished my mom made. The bucatini's small hole soaked up the delicious sauce, and it was made with guanciale in a ground, chorizo-style protein that was extremely well-seasoned and slightly saltier than the carbonara, in a good way. I could eat both dishes forever. Paired with a delicious bottle of wine, it was one of the best meals I’ve had in a long time. If you're looking for a place to go, go here; it will not let you down. Additionally, the croquettes were incredible – perfectly crisped outside with a warm, tomatillo-forward rice inside. The smell of smoked mozzarella upon cutting into them was amazing, making them a great appetizer.
