Polynesian Florida Yellowfin Tuna Steaks
From Fresh from Florida (Canada, UK), by Diana Gonzalez Kirby.

Ingredients:

2 pounds Florida yellowfin tuna steaks, fresh or frozen
1/3 cup soy sauce
1 can (8 ounces) unsweetened, crushed pineapple
2 Tbsp ketchup
2 Tbsp vegetable oil
2 Tbsp finely chopped parsley
1 Tbsp lemon juice
1 clove garlic, finely chopped
1/2 tsp oregano
1/2 tsp pepper

Instructions:

Thaw steaks, if frozen. Cut steaks into serving size portions. Place fish in single layer in a shallow dish. Combine all remaining ingredients. Pour sauce over fish and marinate in refrigerator for one hour turning once. Remove fish, reserving marinade for basting; place fish on a well-greased broiler pan. Broil about 4 inches from source of heat for 3 to 4 minutes. Turn carefully and baste with remaining marinade. Broil an additional 3 minutes longer, or until tuna has a slightly pink center.

Yield: 6 servings
