Beat butter at medium speed of an electric mixer until creamy; gradually add 1/2 cup sugar, beating well. Add egg, beating well. Stir in lemon extract.

Combine flour, baking powder, and salt; add to creamed mixture, beating well. Shape dough into two 12-inch rolls; wrap in wax paper, and chill at least 6 hours.

Unwrap rolls, and cut into 1/4-inch slices; place on lightly greased cookie sheets. Brush tops of cookies with cream, and sprinkle evenly with sugar crystals, if desired.

Bake at 400°F (205°C) for 8 minutes. Cool on wire racks.

Note: Dough may be frozen by wrapping securely and freezing up to 1 month. Remove from freezer; slice dough, and bake as directed.
