Amish Onion Pie

Ingredients:

4 thick slices of bacon, diced
2 cups chopped onions
1 cup sour cream
2 eggs, lightly beaten
1 Tbsp flour
1/2 tsp salt
1/4 tsp pepper
9" pie shell, unbaked
caraway seeds (optional)

Instructions:

1. Sauté bacon in a large skillet until evenly browned. Drain, but reserve 2 Tbsp drippings. Crumble bacon and set aside.

2. Sauté onions in reserved bacon drippings until clear. Return crumbled bacon to skillet.

3. Stir in sour cream, eggs, flour, salt, and pepper. Mix well.

4. Pour filling into pie crust.

5. Sprinkle with caraway seeds, if you wish.

6. Bake at 425°F (220°C) for 1 hour, or until onions are golden brown.

Yield: Makes 6-8 servings
Prep Time: 30 minutes
Cooking/Baking Time: 75 minutes
