From Dish: Into the Mix, by Diane Muldrow
Traditional Guacamole is very simple, and uses just a couple of ingredients! But we like to add other ingredients to enhance the flavor.
4 ripe Haas avocados (the ones with the black, bumpy skin) make sure they are slightly soft when you press them, but not too soft!
salt & pepper to taste
Cut the avocadoes in half, peel them, and cut away any gray parts. Throw away the skin and the pit.
Put the avocado pieces in a bowl and mash them with a fork. Guacamole should be smooth, with some chunky bits of avocado.
Season with salt & pepper to taste.
You can add one or more of these ingredients to your guacamole after you have mashed the avocados. Make sure you mix it really well! You can try a different combination every time you make it, or stick with your favorite flavors! Just remember that the taste of avocado is very mild you don't want to overpower it with too many extras.
