Mom's Guacamole
From Dish: Into the Mix, by Diane Muldrow

Traditional Guacamole is very simple, and uses just a couple of ingredients! But we like to add other ingredients to enhance the flavor.

4 ripe Haas avocados (the ones with the black, bumpy skin) — make sure they are slightly soft when you press them, but not too soft!
salt & pepper to taste

Cut the avocadoes in half, peel them, and cut away any gray parts. Throw away the skin and the pit. Put the avocado pieces in a bowl and mash them with a fork. Guacamole should be smooth, with some chunky bits of avocado.

Season with salt & pepper to taste.

Optional Ingredients:

You can add one or more of these ingredients to your guacamole after you have mashed the avocados. Make sure you mix it really well! You can try a different combination every time you make it, or stick with your favorite flavors! Just remember that the taste of avocado is very mild — you don't want to overpower it with too many extras.

1 medium tomato, chopped into tiny pieces
1 clove or garlic, crushed in a garlic press
1 tablespoon onion, chopped fine
1 to 2 teaspoons lemon juice or 1 teaspoon lime juice
1/4 cup finely minced cilantro
1 teaspoon chile powder
1 jalapeņo pepper, seeds removed, minced
