 Where can I find pancetta?

 There is at least one brand of pancetta on the market (Citterio) that is packaged for sale in supermarkets. Whether it is available in any supermarkets in your area may require picking up the telephone and calling local markets. You can also call Citterio at 800-435-8888, and ask them for the stores nearest you that stock their pancetta.

Alternatively, any Italian market will stock pancetta, as well as some specialty food markets and some delis. Obviously you stand a much better chance of finding it if you live in an area with some significant Italian heritage.

If that doesn't apply to you, pancetta is available online for home delivery. Obviously that adds to the cost and complexity, but we are pretty happy that you can get almost anything these days in almost the middle of nowhere.
