Cream of tartar is one of those mystery ingredients for which people have found various uses over a couple of centuries. Stabilizing whipped cream is not one of them.

Cream of tartar is used to increase the volume of beaten egg whites. It is sometimes used in candy making to produce a creamier product. It is used in many formulations of baking powder.

There is no virtue we know of in cream of tartar, however, that benefits whipped cream. There are various other methods of prolonging the stability of whipped cream. We invite you to consider one of those.
